But I actually use bacon in a lot of healthy recipes where appropriate. Yum!

lol, no really - it can add that little bit of sinful goodness without making it a grease pit.
Last night I made shrimp, thin-sliced white onion, sliced cherry tomatoes, green onions, chipotle peppers in an adobo sauce, with 4 pieces of bacon crumbled in, and used the drippings to cook the shrimp and veggies instead of adding butter or oil on top of the fat that was already in the bacon. garnish with extra thinly sliced green onion and a little parm cheese shavings, not grated. Recipe said you could serve it over grits, or in a wrap, but we just ate it plain, was super good!

That does sound good. Tried the turkey bacon route one time...didn't stick. Literally my dog wouldn't eat it. There was one good kind but it was packaged in regular bacon grease, defeating the point. Damn you bacon. I rarely eat breakfast, but for some reason whenever I am in the Caribbean or any Spanish speaking country they have the best bacon/sausage.
