Tabbouleh!
One of my all time favorites, haven’t had it in a while. Baked-fresh Chaldean flatbread, I was standing there when they pulled it out of the oven today! Fresh mango for dessert. One change this time is freekeh in place of bulgur. I am out of bulgur and have some freekeh on hand. Both are wheat, simply different forms. Freekeh is young green wheat, fire roasted and uncracked. It has a fresh and smokey flavor and fits well in tabbouleh. Today’s tabbouleh was seasoned with EVOO, fresh lemon juice, s&p and generous cumin. Garnished with pepperoncini and kalamata olives. Masala khichdi
Indian rice and lentil stew. Basmati rice and moong dal lentils stewed with onions, garlic, tomato, green chile, aubergine and a litany of whole and ground spices. Nice warm comfort food. Fresh mango for dessert! |
