Last version was with this grilled piece of gruyere and some kind of drizzle... it was fantastic. 5-egg omelet with parmesan, sour cream, and milk then covered with Mexican 4 blend cheese, served with sourdough bread and washed down with whole milk.

Yes, since I have chickens, I can still afford, and have access to, eggs.

Looks like roast potatoes, which are a staple here in the UK, but bizarrely I’ve never found anywhere in the US that does them.

I'm no chef, but I think they are fried. They are very crispy outside almost like fries. They are really good though.
