I heard there is no such thing as a CPO e60 M5, due to expensive maint. and repair costs. I also heard BMW cancelled extended warranty and maint. plans. Is this true??

Supposedly none of the new M-cars can be CPO'ed or receive extended service plans - the new M3, M5, M6. The S54 was the last engine eligible.
