Thanks g14... but what I don't understand is, if I restore to the regular apple firmware state, thus unjailbreaking it, that means that I will be restoring to a backup prior to jailbreaking. But what about to all the changes I've made and data I've added to the phone while it's JB... how will that be backed up, to then included it on the phone once I JB to the new 3.1.2 cracked version?

Update: Had to make some corrections to my question above.
not sure if i follow your question

but

when you back up the iPhone, you only back up data not anything to do w/ the firmware. so if you have a stock iPhone and you jailbreak, you can get all the info that was on there before the JB and vice-versa

on the JB subject, i prefer to use pwnage tool rather than blackra1n.

another way for tethering is PDAnet, also in cydia

Okay, I think I understand your answer... but just to be on completely clear, let me tell you my scenario and perhaps you can guide me best:

My iPhone 3G was at FW 3.0 when I jailbroke it with redsnow. Since then, I haven't backed anything up because I'm under the impression I can't using iTunes... is this correct?

What I want to accomplish now, is have the latest FW version, 3.1.2, but I don't know how to go about it. If I restore my phone to the time before I JB, and then update it via iTunes to 3.1.2 and the re-jailbreak it, I will lose all of my stuff /data, since I haven't done a backup.

So, how can I upgrade to 3.1.2, and possibly maintain the jailbreak, or if that's not possible, how do I upgrade to 3.1.2 and re-jailbreak it without losing any of my data and cydia apps?

No that is not correct, you can do as many back ups as you want, jailbroken or not. you can always do a "restore from the back up of" to set up the iPhone. my iPhone is jailbroken and most of the data is synced thru mobileme w/ no problems, the rest i back up manually every week or so

i assume you are on a mac () since you used redsn0wn, so it should be easy to upgrade you to a jailbroken 3.1.2, just follow these steps and you should be golden

Now, actually I'm on a pc, not a mac... so how would I upgrade my phone to 3.1.2?

no it doesnt include cydia stuff

this is how to upgrade to 3.1.2 in windows (note, i dont own a PC so i cant verify that this works, but ive yet to see bad info on iClarified)

that can only be done w/ pwnage tool, when you create the ipsw you can pre load all the cydia apps you want, so after the jb you goto cydia hit update and then all the cydia apps are now back on your iPhone

pwange tool is mac only though

follow those instructions and its under cydia settings, there you select what packages (apps) you want

then after that all you do, is after you restore to the custom ipsw, go into cydia and hit update all and all those packages will be installed
