To actually add something beneficial to this thread (which is a change for me), probably my favorite, and easy to drink is Riesling wine. There is a reason why almost every sommelier I know, that is also their favorite. Sweet, dry, to aged dessert wines, it does it all. So many flavours, it is incredibly complex, and easy to drink.

A good Riesling is second to none, and even the really good ones are affordable.

Alcohol is often an acquired taste, usually not something that people appreciate right at the start. I find many alcohols bitter, so need a fair bit of sugar to make it palatable, such as margaritas and mojitos and mules. But I've developed an appreciation for wines and beers too (but nothing oak aged, nor the high IBU beers.)

That said, if you want to try something new for your 40th - which I think is cool, the only time I've ever sky dived was on my 40th - then I suggest you find a high end restaurant and request the sommelier help you out after explaining your situation. A good one will be able to pair a different drink with each course and give you a variety of which some you might like a lot.
