Tonight a hearty course of Charlie Bigham's chicken korma with pilau joined by the ubiquitous mixed salad with caesars dressing and sprinkled with pumpkin seeds, also you can squeeze some lime on to it if you wish.

So i fry the fish first whole. Or if i filet it, I use the carcass but I still fry it. Then I throw some ginger in that oil with the fish in it. Pour HOT BOILING WATER OVER IT. The Gelatin from the Bones will all come out. It ends up looking like this. I made it for a friend for his Bday, I added some lemongrass in it

Grilled boneless chicken thighs, roasted broccoli and beet salad, and of course a nice Cabernet. I can’t believe it took me 58 years to discover chicken thighs. I always cooked white meat. I guess because my mom always cooked chicken breasts. Will add pics tomorrow.

Its a local Maryland franchise/chain. But of all the Poke places I've had in the MD, DC, and VA area, they're my favorite and best of all, close to home.

I always get the same thing. White Rice Base, Tuna, Salmon, Shrimp Tempura, Classic Sweet and Sour Sauce, Scallion, Sesame Seeds, Mango, Pineapple, Cream Cheese, all topped with Yum Yum Sauce, Tempura Flakes, and Nori Strip.

I discovered chicken thighs in the early 1970's, in particular the technique to wire them into a crab trap as bait. Funny thing is that I'll eat chicken thighs breaded/fried, but won't touch seafood.....
