I copy an pasted the rules from a previous contest and it said sunday - forgot to change it. M-F submission time was or original idea to keep on track, then Sat and Sun was dedicated to voting.

No worries. Copy/paste errors are sneaky bastards. In general, though, I would submit that if something similar happens again, that the difference is declared the deadline. In this case, Saturday.
