Haven't had one in a while. Steak Dry Strip Poutine.

First time I used Shoe Lace string French Fries in a Poutine.

It's was good but it requires large quantity of Fries compare to the regular cut version.

Chicken étouffée

So good. My second time making étoufée. As with any stew, long cooking time is needed to bring out the flavors from the herbs and spices. I toned down the three types of pepper (white, black and cayenne) and went with more oregano and thyme.

This version was nicely savory with pronounced herb flavors and some bite from the pepper. The roux was cooked a bit darker this time, compared with the shrimp version I made a few weeks ago. Served on Basmati rice.

One leftover portion will be better tomorrow than it was tonight because of more time for the flavors to come together!

Wings on the BabyQ. I've been experimenting with honey and the insane Carolina Reapers, a Guinness World record holder for Scoville heat units. I found that two small drops per oz of honey was a good blend with enough heat w/o calling 911.

In the mix, wearing eye protection and surgical gloves, I added four drops hoping for the best. Actually, I was disappointed with the results. It looks like baking essentially took away all the spiciness. Anyway, the wings were still delicious.

Paired Libations - Hefe Weissbier + top self Anejo tequila

Some chile habanero sauce added for 'tasty heat'..these to enjoy along with catch-up on some F1 & IMSA racing today
