Chicago pizza is overrated IMO.


Theres a good brick fired oven place here in Utica called Tivolis. Anchovies, ham, black olive, and diced tomatoe.

Honestly, i tried to make smaller batches of our original recipe and it didn't work. Trying to cut a tablespoon of ingredients into 50 makes shit all kinds of wonky.

The recipe the bakery uses is like a 98% match of what ours was and they make it daily. They do suck at rolling it into dough balls. They use a machine which allows larger air pockets to get into the dough balls before the dough starts to rise. Makes it difficult to sling some times, thin spots. If RJ would pull his weight around her, he'd be hand kneading the dough balls rather than just tossing it.

(When i read his first post about slinging dough i wondered if he purposely chose that term instead of "hand tossing".)

Completely agree. I went in with certain expectations given everything I had heard and was really disappointed. To be perfectly honest, everything about Chicago was disappointing, I wouldn't go back at this point. Everywhere we ate, it was mostly subpar, and there were no deals on anything re: shopping for my wife. Plus rainy and windy.

Went to Sarasota immediately after and enjoyed it immensely. Food was better too, which I was not initially expecting, but Chicago set the bar so low that we honestly really enjoyed the restaurants in that area.

Nah, have you never listened to your grandparents and parents?

They had to walk uphill both ways to get to and from school. The way I see it, both generations have walked uphill so long that they must be at the pinnacle now. Only downhill coasting from here for me.

Completely agree. I went in with certain expectations given everything I had heard and was really disappointed. To be perfectly honest, everything about Chicago was disappointing, I wouldn't go back at this point. Everywhere we ate, it was mostly subpar, and there were no deals on anything re: shopping for my wife. Plus rainy and windy.

Yeah, that's where we ate for a lot of the trip. We were at the Long Boat Key resort so right nearby. Just a really nice trip all around.

Picked up a few cigars to have overlooking the ocean, tried for some Cubans, but as expected the guy assured me he didn't have any Cuban cigars, but still found some decent ones.

Overall, I thought Florida was very reasonably priced as well. Definitely would go back, but not this year as we are expecting #2 and I've heard there's been a few cases of Zika. So we'll probably go Arizona or something if we go anywhere in February. No idea if we'll actually go somewhere yet, we are still undecided.

I have a place on Lido (at the end of the island) - and rent it to a couple from 'Up North' for the season

Zika is a concern - doubt you'd find it in Sarasota though...

If/When you come back down - send me a PM and I'll recommend a couple places.

I'll definitely PM you before we go back. We'd certainly like to go back, though there might be a few other areas in Florida we check out first to compare. We really liked Sarasota. But we just didn't know if it's Florida in general that we like, or whether it was truly just the atmosphere in Sarasota. Either way, we will be back.

Ain't nothing wrong with buying dough balls, we would get ours from an Italian food distributor in town. You've got the process right, gotta get it loosened up with some manual kneading, maybe a little mechanical help, then do the hand tossing. Keep your hands lightly powdered with flour: things can get a little sticky.

I missed the pizza discussion!

Last NY trip, we got off the plane and decided to try Lombardi's. After that, we immediately got on the subway disappointed with Lombardi's to head to...Grimaldi's!

While eating Grimaldi's outside, a woman walks by and says, "I'll flash you my "scarf" for a slice of pizza." Too bad she wasn't prime meat like our Peter Luger porterhouse that we had a couple hours later.
