Look who just got dressed for dinner!

Chocolate tart and white chocolate ganache montée recipes from Bruno Albouze. One of my top ten favorite pastries, from both making and eating points of view.

Crust: chocolate shortcrust pastry
Custard: ganache-type with milk, cream, chocolate and egg
Montée: cream, white chocolate, vanilla and gelatin

Gâteau Basque!

Recipe is combination of Bruno Albouze and Boulangerie Pas à pas, both on yt, adjusted for my desired flavor profile and portion size.

Almond biscuit crust filled with vanilla almond pastry cream. On homemade cherry jam. So good!

Traditional is for the cherry jam to be baked, below the pastry cream. I have made this cake in the past with no cherry jam, so decided to bake the cake and pastry cream, and serve the jam on the plate.

amazing what you can find on a BMW forum. i wish i could bake bread just cant make time for it. impressed at what others achieve here, kudos. baking bread is finicky.
