Every day is potluck lunch at the clinic. More so with everyone baking these days. We even make little doggy bags for some of our less fortunate senior patients.
So, a simple salad will suffice for the moment. Romaine hearts, crumbled blue cheese, garlic croutons with Greek feta dressing and fresh bacon bits. Maybe a bed lunch later. |

Tabbouleh!
One of my all time favorites, haven’t had it in a while. Baked-fresh Chaldean flatbread, I was standing there when they pulled it out of the oven today! Fresh mango for dessert. One change this time is freekeh in place of bulgur. I am out of bulgur and have some freekeh on hand. Both are wheat, simply different forms. Freekeh is young green wheat, fire roasted and uncracked. It has a fresh and smokey flavor and fits well in tabbouleh. Today’s tabbouleh was seasoned with EVOO, fresh lemon juice, s&p and generous cumin. Garnished with pepperoncini and kalamata olives.
